A blend of several vintages, this is a stunning and unique example of Riesling from Alsace. This is a dry, salty and cloudy Riesling, nowhere near the off dry examples from Alsace that you may be familiar with. Philippe adds zero sulphur to his wines, he is always thinking outside the box.
Producer notes: Riesling is the king grape variety in Alsace. It is also said that it easily expresses the terroir on which it grows. Thanks to our method of growing vines and good tillage, the roots of this grape variety can go down to more than 10 meters deep and capture trace elements and mineral salts from the parent rock. Thus, Riesling La Chimère is a very structured mineral wine on the palate with citrus aromas. It's crisp and saline with notes of rose hips, acacia and honeysuckle. (tech notes below)

Winemaking
Slow pressing of whole grapes harvested by hand, native yeasts, fermentation and aging for 36 months in casks. Raised without any addition of oenological products or sulphites, without fining or filtration.

Advice
So that it can fully release its aromas, you can aerate it by uncorking it two hours before tasting it. It will go very well with your starters and iodized dishes such as fish and seafood.
