The palate is powerful with tension and lively acidity a crystalline finish defined by a distinct salty minerality derived from the estate's schist soils.

Vinification & Aging: After a slow direct pressing, almost without re-draining, and a settling on the drained juices, the must is put directly into small tanks where the fermentations take place naturally during more than 20 months, without exogenous yeasts nor any oenological products except a little volcanic sulfur.
