Cédric Le Bloas makes certified organic cider in Brittany, France working with a mix of heirloom and local apple varieties from 25-40 year old apple trees. Brittany is in the far northwest of France situated between the Atlantic Ocean and the English Channel. The apples and resulting cider take on more acidity and bitterness from the extreme climate which makes for artful and expressive cidermaking that balances vibrancy with intensity.

undergo secondary fermentation

Everything is done by hand, from picking to washing to shredding to keeving. The ciders are spontaneously fermented with indigenous yeast and undergo secondary fermentation and are bottled without sulfur.   

Ciderie du Léguer is a small 6 ha operation, with their first vintage in 2016 after Cédric and his wife came across an abandoned farm for sale. This is a boutique, family operation, doing things the old fashioned way while caring for the planet.
