Cidrerie Gayouth is a small artisanal cider house in the Bethmale Valley, inside the Regional Natural Park of the Ariège Pyrenees in southwest France. Founder Jonathan Deslandes, an agronomist and oenologist originally from Picardy, worked at wine estates across southern France before turning his attention to apples. He is the first cider producer in Ariège, and he makes his ciders the way a winemaker would, letting the fruit lead.

The apples are 100% from Ariège, grown organically and picked by hand, sourced from local producers while Jonathan establishes his own orchard. His ciders blend regional varieties including Reinette d'Ariège, Api Étoilée, Court Pendu, Pomme d'Île and Museau de Lièvre. Fermentation is slow and started by native yeasts, with careful temperature control, and the cider is bottled on site with a natural sparkle rather than added carbon dioxide. The ciders are made without added sulfites and with very little or no sugar, so they drink dry and true to the fruit.
